Goose eggs anyone? 
I love this comparison of the chicken and goose eggs. The goose eggs are delicious and work very, very well in omelettes and frittatas, which is essentially a crust less quiche. The yolks are very large and in comparing the yolk to egg white ratio, the yolk of a goose egg always wins! I like to mix some chicken eggs in with the goose eggs when preparing the omelettes and frittatas. Goose eggs also work very well in custards! The taste is almost identical to homegrown chicken eggs, but definitely richer than commercial eggs!
